We started with our high-corn bourbon, aged four years in a #4 char barrel from Kelvin Cooperage.
At just the right time, we moved it into a barrel used to infuse honey with our bourbon, while the wood still held a soft, natural sweetness.
The bourbon rested there one final time, drawing subtle notes of honey, oak, and warmth. Nothing added. Just flavor pulled from the barrel itself.
