The Horse

Paul Revere didn't own the mare he rode two hundred and fifty one years ago. She belonged to Deacon John Larkin — borrowed in haste, ridden hard, and never returned.

Her name was Brown Beauty.

She carried Revere from Charlestown to Lexington through the April darkness, covering thirteen miles while the colonies held their breath.

Revere was captured. Brown Beauty was seized by British officers and left in a pasture. The rider became a legend. The horse became a footnote.

Nose: Honey dominates — raw, floral, and unabashedly forward. Caramel and maple add sweetness with more body, while a light earthiness and wisp of smoke keep it grounded. Approachable and aromatic, with a natural, almost wildflower quality to the honey character.

Palate: Honey carries through from the nose but shifts into something richer and more savory. Maple and vanilla fill the mid-palate with smooth, rounded sweetness. A subtle smokiness builds toward the back — present but not aggressive. Excellent mouthfeel noted consistently. More complex and layered than the nose telegraphs.

Finish: Smooth and slow-building. Slight cinnamon warmth surfaces late, alongside a pleasant mouth tingle. Closes with a distinctive hard candy sweetness — think old-fashioned honey candy stick. The smoke lingers quietly without overstaying its welcome. Clean and satisfying.
