The Brave is a single barrel, cask strength spirits series distilled on the square pot still AJ built by hand — an even split of corn and cane, aged for years in Kelvin Cooperage oak, right here in Hopkinsville, Kentucky.

On the night of December 25th, 1776, Washington didn't wait for conditions to be right. He crossed. A single brave decision changed everything.

Nose: Sweet and inviting — honey, cherry, and vanilla lead with a soft floral quality. Baking spices and light nuttiness add depth. The double-oak influence is present but restrained on the nose, contributing warmth rather than aggression. Wheated character comes through as expected: approachable, rounded sweetness without sharp grain edges.

Palate: Cherry and honey anchor the mid-palate with a buttery, oily texture noted by multiple tasters. Baking spice builds through the middle — pepper, cinnamon, and subtle tobacco and leather from the heavy char Kelvin cask. A cola-like quality emerges alongside the fruit. The 50/50 corn and cane combination reads as distinctly sweet but with savory oak structure underneath. Sweet front, spicy back — a consistent through-line across the panel.

Finish: Variable in length but generally short-to-medium with a warm Kentucky hug. Honey and cherry carry through, with spice and oak lingering on the back end. Buttery mouthfeel persists into the close. A hint of citrus noted by some tasters on the exit. Smooth overall with heat that's present but not punishing.

The White Label is the only spirit in The Brave series that goes unfinished — no secondary barrel, no layered influence. What's in the bottle is exactly what the barrel gave it. Pure and unadorned, the way the moment deserves.

Nose: Butterscotch is the unambiguous headline — bold, creamy, and consistent across nearly the entire panel. Caramel and vanilla support it with warmth, while baking spices and a hint of brown sugar add quiet complexity. A bread-like quality noted by some tasters gives it a comforting, homespun character. The heavy char medium toast barrel announces itself clearly here.

Palate: Butterscotch and caramel carry through with conviction. Brown sugar and vanilla round out the sweetness, with stone fruit and licorice adding unexpected dimension. Smooth and buttery in texture — notably less oily than its double-oaked sibling #1466. Smoky and spicy notes surface for some tasters, a nod to the char influence. Strong flavor presence without being aggressive.

Finish: Long and warm — described by multiple tasters as a warm hug, with a Brown Beauty-like sweetness on the close. Clean rather than lingering, without the coating mouthfeel of the double-oaked expression. Warmth builds gradually and settles comfortably. A small minority found the back end medicinal or unusual, but the dominant panel experience is smooth and satisfying.

The Blue Label finishes in high-rye bourbon barrels — the most assertive finish in the series. Bold, direct, and uncompromising, the way the moment demands. Corn and cane from AJ's square pot still, aged onsite in Kelvin Cooperage oak, then laid into barrels that push back. This one doesn't ask anything of you. It tells you.

Nose: Quiet but purposeful — honey and caramel offer a soft, sweet opening without a lot of fanfare. Baking spices sit in the background. The rye character is present but restrained on the nose, letting the sweetness lead. Not a showy nose; lets the palate do the talking.

Palate: Where this barrel earns its reputation. Rye-forward and spice-driven — pepper, clove, cinnamon, and baking spice build through the mid-palate alongside honey, caramel, and a buttery mid-section. Cocoa and chocolate noted by multiple tasters add richness. Great viscosity and mouthfeel. The remarkable consistency across a large panel: at 102.5 proof, it drinks smooth enough to be mistaken for something significantly lower. Candy-like sweetness balances the spice without softening it into obscurity.

Finish: Warm and spiced — cinnamon and rye linger with a gentle heat that builds rather than bites. Clove and honey round out the back end. Finish length noted as short-to-medium by some, but the warmth carries. One of the most crowd-pleasing barrels in the flight across multiple tasting sessions, frequently cited as a favorite outright.
